The subtle flavours of our chocolate

An intense, elegant chocolate
VENEZUELA72 has a beautifully complex aroma that will appeal to anyone who loves intense flavours of chocolate. It starts with sweet notes of dried fruit, then develops into a rich, warm, spicy flavour of roasted chestnuts, and finishes with a pronounced bitterness.
Perfect pairings
The intense, aromatic flavours of VENEZUELA72 can be enjoyed as is, in a ganache, or hot drink. It also goes exceptionally well with dried fruit (prunes, dates, figs) and spices (coffee, gingerbread) which enhance its aromatic notes, or with rounder, less sweet notes (vanilla, pine honey).
A fruity, acidic chocolate
MADAGASCAR64 makes a bold first impression with top notes built around acidity. These quickly give way to a medley of fresh fruit flavours, followed by a harmonious blend of roasted nut aromas (almonds and hazelnuts). This chocolate is a pleasure to eat thanks to its beautifully balanced symphony of diverse cocoa notes.
Perfect pairings
MADAGASCAR64 pairs well with anything fresh: red fruit which accentuates its acidic notes, citrus fruit or light floral notes (orange blossom, jasmine), as well as peppery aromatics that counterbalance its acidity.
An exotic, surprising chocolate
Our BRAZIL55 is crafted through a double fermentation process and is infused with the pulp of passion fruit in the second stage to deliver a surprising burst of fresh, fruity flavours on the palate. This gradually gives way to the fullness and toasty, woody notes of cocoa. The vibrant aromatics of Brazilian chocolate and the zesty tang of passion fruit create the perfect balance of flavours that’s hard to deny.
Perfect pairings
BRAZIL55 has character which is tempered by its sweet aromas (cream, dried fruit). It pairs particularly well with ganaches and fresh, gourmet tangy mousses.
A velvety, balanced chocolate
CARIBBEAN46 offers a new twist on milk chocolate with a pronounced cocoa flavour combined with an unapologetic sweetness. Made with a higher cocoa content than usually found in milk chocolate, it is stronger but more subtle than most milk chocolate, yet sweeter than dark chocolate.
Perfect pairings
CARIBBEAN46 pairs particularly well with a myriad of flavours like sweet (banana, mandarin, orange), decadent (praline, caramel), zesty (dried fruit), or savory (sea salt, coffee, toasted grains).
An authentic, creamy chocolate
CARA36 is not just our most decadent chocolate, it’s a true classic. You’ll love the creamy milk chocolate that is perfectly balanced with the rich, authentic taste of salted caramel - just like grandma used to make. The final cocoa note adds a slight bitterness, making this a delicious, delicate chocolate you’ll remember for a long time.
Perfect pairings
CARA36 should be paired with tangy rather than sweet flavours (exotic fruit, yuzu, grapefruit, orange) or intense and spicy profiles ( ginger, nutmeg, tonka beans, gingerbread).
An elegant, decadent chocolate
HAZELNUT33 brings together two of our favourite childhood flavours: chocolate and hazelnut. Decadent but light, it starts gently with sublime notes of cream which serve as a preamble to the glorious interplay between milk chocolate and toasted hazelnut. The two dance elegantly on the palate moving in perfect harmony between delicate flavours and luxurious textures.
Perfect pairings
HAZELNUT33 complements rich and textured options like cookie and puffed cereals. It also goes well with contrasting flavours like coffee and slightly tart pear, all of which help to balance out the sweetness of the chocolate.

What our customers have to say

“Great brunch in a nice part of Paris. We opted for several savoury dishes: the salmon waffles were just as delicious as the cheesy toast. We sampled chocolates in different flavours and textures. The small bowls of melted chocolate were perfect for dipping our fruits and pastries. And the homemade juice was fresh and tasty.”

A real PLEASURE. We had booked for brunch at 10:30, so we were seated straight away. The service was super fast and friendly, and we were well guided through the various chocolate tastings.
  • Benoit Chapuis
Chocolate-themed restaurant: delicious, fun and very good. There were 3 of us with the brunch package. A drink, a dish with a side dish, and 2 sweet experiences with the chocolate chosen with the presentation and tasting. The ice cream cone with the chocolate coating of your choice was top notch. We had a great time, the service is friendly and good. Loyalty programme available

Great time! I came for brunch and was optimistic that I'd be able to finish it all, but I wasn't, so you get what you pay for. What's more, the little salad with the hummus made me love beetroot again. I loved the brioche perdue, so I came back the following week to eat one again. I'd like to give a special mention to Marwan who was great with the service (even though all the waiters were really cool in general) and who kindly gave us the ice creams included in the brunch that we hadn't been able to get due to lack of time the week before. In short, I recommend +++.

Great brunch place near Châtelet, booking is possible. The menu costs around €30 at weekends, depending on the dish you choose. You can sit out on the terrace. It was very good and I find the concept very interesting. I chose the savoury waffle (salmon, avocado, parmesan) with the local duo on the side (ham, comté). We were also served pastries (including mini waffles/pancakes) and fruit. We were then invited to taste 6 different chocolates; we had to select two and choose how to eat them (chocolate drink, ice cream or in a ramekin). I chose Dulce de leche and Noisetté33, one in hot chocolate and one in a ramekin to dip the pastries in.
